Dropstop Gastrobar Skopje: A Foodie Stop Worth the Waddle?
After eating our way through plenty of traditional Macedonian food, we were ready for something a little different in Skopje. That is when we stumbled upon Dropstop Gastrobar, and in this review, we are sharing what we ordered, what we loved, what we would skip, and whether we think it is worth adding to your Skopje food list.
First Impressions
Dropstop Gastrobar took us a little farther away from the busy tourist streets we had spent most of our time exploring, and that was actually part of its charm. Even as we approached, it looked inviting, but stepping inside made an even better first impression. Everything felt clean, organized, and thoughtfully put together. As soon as we walked in, one of the first things that caught our attention was the display of house-cured meats, which hinted that the food is taken seriously here. The indoor dining room has a modern, almost loft-like feel, with exposed brick, original stone details, large tables, and a warm contemporary design. At the same time, the terrace out front provides additional seating and was where we noticed people smoking. Those exposed bricks are not simply a trendy design choice. Dropstop occupies a building dating from 1939, and the restaurant says it has preserved original stone, granite, marble and brick as part of the interior. The first impression ticked many of the boxes we would expect from a polished modern gastrobar: a clear identity, immaculate presentation, a comfortable atmosphere, and small details that make you curious about what is coming from the kitchen. It felt considerably more refined than we expected when we first decided to waddle over.

The Experience
From the moment we waddled in, everything felt easy and relaxed. A waiter greeted us almost immediately and showed us to an available table, which was already neatly set with cutlery and everything we needed. The menu and wine list followed straight away, but there was no pressure to order quickly or move things along. We had plenty of time to look through both, settle in and decide what we actually wanted. Service was attentive without hovering, and the whole restaurant had that nice balance between feeling polished and still being somewhere you can sit back and enjoy your evening. Sometimes more refined restaurants can feel a little too formal, but Dropstop managed to keep things professional while still feeling casual and comfortable, which suited us perfectly.



What We Ordered
The menu at Dropstop Gastrobar moves away from the traditional tavern-style food we had been eating elsewhere in Skopje and takes a more contemporary approach. The kitchen combines Mediterranean cooking with Balkan ingredients and French techniques, with much of the concept built around house-made charcuterie, specialty beef, slow cooking, and Macedonian wine. The menu is divided into soups, salads, cold starters, cold specialties, main dishes, slow-cooked dishes, burgers, sides and desserts. You will find everything from beef tartare, cured salmon and house-made dried meats to mushroom risotto, salmon, pork fillet and several cuts of steak, including Flat Iron, Picanha and Ribeye. Some of the most interesting dishes use local wine as part of the cooking, including beef slow-cooked in Vranec and pork neck cooked in Chardonnay. It is a fairly focused menu rather than pages and pages of choices, and there is a clear connection between the food and the wine list, which features Macedonian producers and local grape varieties.
To go with the meal, we ordered two glasses of dry Macedonian red wine. We cannot remember exactly which one we chose, but looking at Dropstop’s current wine list, we think it was Vranec as it would have been the natural pairing for the steak. The restaurant lists several Vranec wines by the glass, and the grape is known for dark fruit, structure and tannins that work particularly well alongside beef. Rather than competing with the steak and demi-glace, the wine’s dryness and structure balanced the meat’s richness and made the pairing feel considered. We thoroughly enjoyed both glasses, and the wine wasn’t simply an extra drink on the table. It complemented what Dropstop does particularly well: beef, sauces with depth, and Macedonian wine served together as part of the same dining experience.

Dropstop Gastrobar combines well-executed food, a relaxed atmosphere, and attentive service with a menu that gives you something different from the traditional Macedonian restaurants around Skopje. The steak was the clear highlight for us, and even simple sides like the homemade fries showed attention to preparation and seasoning. The burger didn’t leave quite the same impression, but it was still well prepared. Add a couple of glasses of Macedonian red wine, an unhurried pace, and a setting that feels polished without becoming formal, and this was easily one of the meals we enjoyed most during our Skopje trip.

Value for Money
Our total for two people came to 1,850 MKD, about €30. For that, we had a flat iron steak with grilled vegetables, a Black Angus burger with homemade fries, an extra portion of fries, and two glasses of dry red wine. When you look at everything we ordered, the value for money is difficult to fault. Paying around €30 for two people for a meal that includes steak and wine, with table service and this level of preparation, felt almost surprisingly low compared with what we are used to paying elsewhere in Europe. The steak in particular offered strong value, given the quality of the meat, cooking, and accompaniments. Dropstop is not simply inexpensive; the quality of the meal comfortably justified what we paid, making it one of those rare restaurant bills where we looked at the total and thought, hello, how is this only €30?
Things to Know Before You Go
- Best Time to Visit: We visited for dinner, and it suited Dropstop well. The atmosphere was relaxed, service never felt rushed, and it gave us time to enjoy the steak with a couple of glasses of Macedonian red wine.
- Reservations: Recommended, particularly for dinner and weekends. Dropstop is a relatively small restaurant, so booking ahead makes sense if you have a specific evening in mind.
- Getting There: Dropstop is at Maksim Gorki 31A in central Skopje, around 250 meters from Macedonia Square. It initially felt like we were wandering away from the main tourist area, but it is actually only a short walk from the square.
- Parking: If you are driving, plan to use paid parking in central Skopje and walk the final stretch. We would not choose to drive here if you are already staying around the city center.
- Public Transport: Dropstop’s central location means you can reach the wider area by Skopje’s buses, but if you are sightseeing around Macedonia Square, walking is by far the easiest option.
- Dress Code: Casual or smart casual works well. The restaurant feels polished and put together, but we never felt like we needed to dress formally.
- Smoking: One thing we particularly appreciated was the completely smoke-free indoor dining room, especially after encountering quite a lot of smoking elsewhere during our Skopje trip.
- Experience Tip: Come hungry, and don’t skip the steak. Dropstop specializes in cuts including Flat Iron, Ribeye, and Picanha, and pairing your choice with a glass of Macedonian Vranec is a great way to experience what the restaurant does best.
